Time to fire up the barbecue again! We’re cooking up a rotisserie style Prime Rib perfect for your next backyard gathering. Baked potatoes make a delicious side, but this meaty meal pairs great with plenty of other options!
1. Season your prime rib generously with salt and pepper on all sides. Turn the barbecue on at medium heat.
2. Cook on the rotisserie over indirect heat until the internal temp reaches 120°F – about 2 hours all together.
3. Clean and prep your sides while the meat is cooking. To cook the potatoes over medium heat, warm them in the microwave first, then wrap in tin foil and finish on the barbecue.
4. When the prime rib has cooked and crisped on the outside, remove from heat and let rest for 20 minutes.
